I used to make simple buckwheat pancakes occasionally, just equal amounts buckwheat flour and water, some baking powder and spices and salt. But I haven't been able to find reliably gluten-free buckwheat flour for a while. I decided I wanted pancakes and I have teff flour, so I looked around for a teff pancake recipe. (No, not injera, that's a whole different project that was unsuccessful a while back.)

I found this recipe: Fluffy 20 Minute Teff Flour Pancakes by Janet Harlow, which was way too complex for my taste. So I read this one: 5 Ingredient Teff Pancakes at Zest for Baking by Christine, which has some oddities - 1 Tablespoon of vanilla??, no salt?? - but I decided to use it as a basis to improvise.

Christine's recipe requires teff flour, baking powder, coconut oil, almond milk, and vanilla extract. I don't have any kind of milk, nor coconut oil. I do have mixed sunflower/coconut oil and an egg. So I did the following.


Tools: pan, spatula, fork, bowl, 1 cup measure, 1 1/2 tsp measure (yes I have one, and two of those make a Tablespoon).

Start heating your pan, medium heat, with cooking oil. I used a small pan and made large-ish pancakes one at a time.

Combine in a medium bowl:
1 cup teff flour
1 1/2 tsp baking powder
1/4 tsp salt (seems important)
Mix with fork

In the 1 cup measuring cup:
Crack in 1 large egg, beat with fork
Add:
1 Tablespoon vanilla (what the heck, might as well try it)
1 Tablespoon sunflower/coconut oil
Beat with fork
Add enough water to fill the one cup measure, stir gently

Add liquid to bowl, mix. Makes a thick batter.

Pour some batter into pan, flatten a bit with fork. Wait until top is starting to set, and flip. Cook until the second side is ready. Add more cooking oil and repeat until out of batter. These actually came out cooked through, which surprised me - I'm no pancake expert.

Makes 4 large, fluffy pancakes.

They were tasty with maple syrup on top, and met the craving I was having. Your results are absolutely not guaranteed - you might want to follow one of the linked recipes instead. Let me know if you try making teff pancakes of any kind!

Having dodged the dairy bullet, I make butter every few weeks, which means I have buttermilk every few weeks.
Buttermilk means pancakes.
So...
Teff/Sorghum Buttermilk Pancakes
480ml buttermilk
1 egg
1/2 cup teff flour
1/4 cup sweet sorghum flour (or quinoa flour, or a mix of both)
1/4 cup plain GF flour + 1tsp baking powder OR 1/4 cup self-raising GF flour
Additional water or flour to adjust consistency.
Optional pinch of salt.

Blend, and cook - makes 8-10 pancakes. Serve with whatever you wish - we use lemon and sugar or maple syrup, sometimes with bacon.
