Having dodged the dairy bullet, I make butter every few weeks, which means I have buttermilk every few weeks.
Buttermilk means pancakes.
So...
Teff/Sorghum Buttermilk Pancakes
480ml buttermilk
1 egg
1/2 cup teff flour
1/4 cup sweet sorghum flour (or quinoa flour, or a mix of both)
1/4 cup plain GF flour + 1tsp baking powder OR 1/4 cup self-raising GF flour
Additional water or flour to adjust consistency.
Optional pinch of salt.

Blend, and cook - makes 8-10 pancakes. Serve with whatever you wish - we use lemon and sugar or maple syrup, sometimes with bacon.
