I would like to bake something with blueberries to send to colleagues in another state once my blueberries start coming in. I *can* dehydrate the blueberries, but that seems to diminish the point. I believe a colleague needs gluten free, and i would also want to make the treats vegan. If i wasn't sending by mail, it seems a tart would be nice. I think i have tiny tart pans if that's the best idea....

Ideas welcome!

I recently tried two different brands of gluten free frozen meals and was not deeply impressed.  The "bettergoods" meals I tried were just fine but of course I'm hoping for better than "just fine".  And the meal from "Blakes" was a confused mess of really great and icky. 

 

I have really enjoyed most of the meals I've gotten over the years from "Amy's" and I have no complaints about any of them.  I was just hoping to widen the possibilities for those times I defaulted to something frozen from the freezer instead of having to actually cook myself. 

So, what brands available in north american grocery stores do y'all have experience with and like eating??

I'd like to make a snack out of dates and shredded coconut run through a food processor, but most recipes have nuts in them to hold it all together, and I'd like to make them without. Anyone have a recipe you like?

I did find a recipe for Coconut Date Balls that doesn't have nuts at AllRecipes, but it's so odd that I kind of wondered if it was generated by an LLM based on cookie recipes. I did try it, with some modifications.

First, it adds an entire cup of sugar, when dates are plenty sweet already. I added a little. Then it cooks beaten egg and dates and sugar on the stove, "stir occasionally." I realized I was going to end up with scrambled egg & dates if I didn't stir constantly, so I did. I added the vanilla, and substituted coconut/sunflower oil for the Tbsp of butter. Instead of crisped rice, I added about 3/4 cup sweet rice flour. It ended up tasting kind of like raw cookie dough (yum).

I started to roll the warm dough into balls and dip it into the shredded coconut (from Trader Joe's), when I realized I was going to have to get the food processor out after all to make the shredded coconut small enough to have a chance of sticking on.

I used Barhi dates because that's what I happened to get at the farmer's market a while back. They were still soft, not as dried out as I would have expected after sitting around in my cabinet for a while. And I think they're sweeter too, which made the sugar even more unnecessary.

I might try just dates and coconut and some sweet rice flour in the food processor next time. What do you all think?

Does anyone know of a frozen French fry available in the US that's GF and soy-free? Even my usual trick of looking at the "natural" or "organic" brands has failed me as they all inevitably use a blend of vegetable oils and may include soy.

I just got an air fryer (well, Boyfriend did and I want to play with it) but I don't really know what works best with it and would like some ideas. It's a smaller model, so things like whole chickens or pizzas are right out :)

What are your favorite recipes? are there any tips and tricks to GF cooking in one?

A kind vendor at the farmers market gave me some extra peaches, and I'd like to bake something with them. Any recommendations for a basic tart or pie recipe? A neighbor gave me a pint of raspberries, so I could throw some of those in too.

I found this easy peach cobbler recipe that looks good, but it emphasizes a flour mix that I don't have in the cupboard.
What I do have is coconut milk and sweet rice flour (and rice), so I'm going to make this mango and sticky rice recipe that I've made before (without the fancy fruit rose), only with peaches instead of mango.
I might also try this coconut and peach mochi recipe since I also happen to have apricot jam.

Somewhere I saw an article about making bread in the slow cooker.  (I'm thinking people have been experimenting during the lockdowns.)  And I'd like to try but since I'm gluten free the recipes will need to adapt.  I checked out the recipe at A Year of Slow Cooking which gives me confidence but I don't want to use a loaf pan inside my cooker. 

And so my question: have any of you folks made yeast bread in your slow cooker?  I want a simple, round loaf of basic bread.  There are certainly hundreds of gluten free bread recipes available online that will make fine bread but I'm hoping someone here has actually done so and can offer 'do this' 'don't do that' and 'maybe you should'.

Hello fellow gluten-free people. I want to upgrade my baking skills. Right now that's taking me in the direction of gluten-free crackers, flatbreads, etc. So... can you recommend good recipes, preferably fairly easy ones? That use pre-blended GF flour as opposed to needing to blend different flours etc. to make your own? I would be so happy.

I have Googled for these already, so I guess what I'm looking for are your favorite ones available on the interwebz and/or any you got from a cookbook or from your own sweet brain. Thanks so much!

I'd like to send a gluten free care package to a friend, preferably without resorting to the large retailers known to be engaging in unsafe labor practices at this time. Would love to support a small business.
What are good places to order a nice selection of gluten free goodies (cookies, crackers, other ready to eat/shelf stable items only-- friend is not able to prepare foods). Other dietary restrictions are no caffeine (including chocolate, alas) and no artificial sweeteners.
Schaer website is unfortunately broken-- I can't check out! Ideas?

This Bon Appetit recipe makes my mouth water--three inches of fresh ginger & pepitas! I need advice for how to substitute "2-1/2 cups flour." I have terrible luck with "all purpose GF flour mixes."

It's a savory bread, so almond flour? Corn meal? Sorghum? Garbanzo bean? All of the above, and in what proportions?

A couple of years ago, I bought their Organic Beluga Lentils and found them to be fresh, quick to cook (around 30 min), and tasty. I ordered a 5 lb. bag and some cereal to get to the $75 for free shipping. Looks like they no longer carry those lentils, but they still have other kinds, like these red split lentils.

The reason I haven't reordered is that even though this company processes food in a facility that does not process wheat, and they test for gluten, I get my gluten contamination symptoms from eating these lentils. Maybe I'm sensitive to lentils themselves, who knows.

Does anyone have recommendations for places to get truly gluten-free lentils, beans, etc?

Hi All

I'm going to be travelling in Ireland (primarily Dublin and Belfast) in the next few weeks. Anyone have recommendations for successfully eating gluten free? Places to go, food to eat? Places to avoid? Traps for the unwary? I'm running on a limited budget, and I'm (as much as possible) also vegetarian and dairy free. The more I can maintain that, the better I'll feel!

I'm recovering from food poisoning (ugh!) and my gut is really tender, so I need bland foods for a while. When I was a kid, the thing to eat was saltine crackers. Or toast. Or noodles. Why do all these recovery foods have gluten??

I've been eating bananas, plain rice pasta, and chicken broth (Pacific Foods, labeled gluten-free, although it has onion powder, sigh). I need more ideas, please? What do you eat when you're being kind to a tender gut?

Calling UK residents! I'm moving to the UK in September. (Scotland, to be precise, and I will be in a big(ish?) town so should be able to get a good variety of stuff?)

What I'd like to know is what kind of GF stuff is available, and which shops are most likely to carry it? (And also so I know which store managers to badger about ordering stuff in if my local shop doesn't carry it :D)

- Can I get fresh GF pasta (not dry) ?
- Can I get fresh GF bread (not frozen)?
- Which brand of GF flours are your favourite (and where do I get them?)
- Does anyone remember which shop carries the double/triple chocolate chip cookies that come in a black and purple box? They are very good and I want a pack as soon as I get there, lol.

Anyone have any tried-and-true gluten free/vegan frosting recipes for cupcakes? I'd like to make some cupcakes for my coworkers to celebrate a semi-fancy engagement. I don't often bake, but frosting sans-dairy (and eggs? It's been years) has always been a bug-bear. Anything you've tried with substitutes for butter that isn't overwhelmingly coconut-oil flavoured would be helpful.
