Hi all, does anyone have a decent GF recipe for coffeecake? I'm thinking ahead to Christmas--my dad always makes coffeecake as part of Christmas breakfast. My wife and I will be doing our own Christmas festivities this year, and I want to replicate the experience as much as possible.

I'm partial to this one from King Arthur that uses their GF Baking Mix.

I like this one from semper. I've made it with other gf flours and had success with it, so it probably translates pretty well to whatever flour mix you have available that's suitable for baking cakes.

English translation:

Ingredients

Cake:

2½ dl whole milk
100 g butter
4 eggs size L
300 g sugar
275 g Semper Fin Mix
2 teaspoons baking powder
½ vanilla bean or ½ tsp vanilla extract

Topping:

150 g butter
200 g desiccated coconut
300 g brown sugar
1 dl milk

Method:

Turn the oven to 200 degrees.
Heat milk and butter in a saucepan until the butter is melted. Set it aside. Beat eggs and sugar in a bowl until the mixture is white, thick and frothy.
Sift flour, baking powder and vanilla into the egg mass and turn with a light hand until the dough is mixed. Carefully mix in the milk-butter mixture.
Pour the dough into a greased and floured baking pan and bake the cake on the middle rack in the hot oven for 20 minutes.
Meanwhile, make the filling by mixing butter, desiccated coconut, brown sugar and milk in a saucepan. Stir it while heating until all the sugar has melted and the filling is well mixed together.
Spread the filling on the baked cake and bake it for another 5 minutes in the oven.
Take the cake out and let it cool to room temperature.

This comes from the bag of baking and pancake mix I use to make muffins and pancakes. I love this coffee cake and so does my husband. I think this is actually better than the coffee cake from Joy of Cooking I made for many years, before going gluten free.
