Berry Pudding for One

Six minutes from desire to eating
40 g frozen cranberries
1 Tbs (7 g) almond flour
3 Tbs (55 g) cooked squash
30 g frozen blueberries
5 drops sesame oil or pat of butter
- Place cranberries and almond flour in a small glass dish with a tight fitting cover. Stir, cover and microwave 30 seconds at full power
- Pull dish, add in squash, stir, cover and microwave 30 seconds at full power
- Pull dish, add in blueberries, stir, add in fat, stir, cover and microwave 30 seconds at full power
My microwave is 1100 watts.
I tend to not like things sweet -- you may well wish to add some sugar.

Date: 2022-10-02 10:12 pm (UTC)I had to cut back on the squash and applesauce for FODMAP reasons. This morning's delicious version was:
50 g frozen cranberries
40 g cooked squash
20 g (3 Tbs) almond flour
microwave on high for 90 seconds, then stir thoroughly. Add in
50 g blueberries
microwave on high for 45 seconds, add in
2 tsps lemon curd
stir very thoroughly and eat with glee.
Lemon curd has dairy and eggs; lemon jelly would be a good twist for veg*n.

Date: 2022-10-06 10:09 pm (UTC)Hooray! Today I learned that allspice isn't, as I'd thoughtlessly assumed, a mix of other spices. It's its own wonderful flavor, and I think I need some right now.

Date: 2022-10-08 04:24 pm (UTC)Allspice is great! It's halfway between sweet and savory -- a blander garam masala and/or a sturdier pumpkin spice. I will be exploring its deployment.

Date: 2022-10-08 05:27 pm (UTC)Actually, I would have said it's a frequent ingredient in her recipes, but flipping through my cookbooks doesn't support that? I do add it to pumpkin-based dishes, though.
