Veggie dinner
5 July 2023 06:55 pmA couple of veggie recipes I just had for dinner. These are portions for one, so expand as needed.
Broccoli salad:
2 cups broccoli florets cut small (about fingertip size)
1/2 a green onion, finely sliced
1/2 a medium carrot, cut very small
1 Tbsp chopped coriander or parsley
1/2 tsp celery seeds
2 Tbsp toasted sunflower seeds
Dressing:
1 Tbsp Apple cider vinegar
1 Tbsp Olive oil
1 tsp Dijon mustard
1 tsp sweetener or honey
salt & black pepper
Directions:
Cover broccoli with boiling water for 5 min then drain and pat dry. Cool it a bit then mix in other ingredients and dressing.

Cheesy Stuffed Mushrooms:
3 good-sized button mushrooms, stems removed
Stuffing:
2 Tbsp finely grated cheddar cheese
1 medium shallot, finely chopped (or 1/2 a small onion)
1 Tbsp mayo or Greek yoghurt
1/2 tsp paprika
Salt & pepper
Directions:
Clean the mushrooms, remove the stems, rub with olive oil. Mix up stuffing and fill the mushrooms. Put in an oiled oven dish, bake at 180 degC/350degF for 20 min.
