A new keto-friendly salad

I want to eat more spinach, but I find it a bit floppy as a salad by itself. So I've taken to combining it 50:50 with fine-sliced cabbage, plus whatever else I like (chopped tomato, green onion, herbs, red capsicum etc). It's much more interesting, mixed in with the cabbage.
And a great dressing is the pure cream one: 1/3 cup cream, 1/2 tsp wet mustard, S&P, 1/2 tsp sweetener, and a dash of apple cider or wine vinegar to taste. The vinegar thickens the cream and the whole thing's keto-friendly.
