A cookbook that is all almond flour (almost) all the time. No gums, no refined sugars, and only a little starch.
The Gluten-Free Almond Flour Cookbook: Breakfasts, Entrées, and More, by Elana Amsterdam: I initially picked this up because I wanted to see how I could use more almond flour in my baking, but this uses all almond flour, which I generally prefer not to do. I made the Paleo Biscuits and while they definitely came out biscuit-shaped, the almond flavor was too heavy for me, as was the crumb.
The recipes occasionally have a little flaxseed meal or arrowroot starch in them and most use grapeseed oil and agave nectar or yacon syrup. Each recipe is ranked for its sweetness level, and most recipes are fairly low in sweetness. Unfortunately for me, Amsterdam uses the word "healthy" a lot, and there's too much of an emphasis on virtue, e.g. "guilt-free" eating. I don't want any moralizing with my food, thanks. Healthy is different for everyone.
Still, if you're interested in cooking exclusively with almond flour, this might be worth a look. It does sweet and savory baking, and some dishes that require breading meat or vegetables. There are several pie and quiche crusts, as well as crackers, cookies, scones, cakes, and even some frostings and fillings. There aren't any gums, and only the occasional addition of starch, and the recipes are low glycemic because of the agave nectar. Many of them are dairy free, and some are completely vegan. The book has a few color photographs and a helpful index, but no advice on how to store the things you make, or how long they'll last.
If you want to check out Amsterdam's recipes, Elana's Pantry has many of the things in this book plus a lot more. There's a huge back catalogue of paleo recipes, while her most recent recipes are keto.

I might not like baked goods that are all almond flour, but I've found that the addition of cocoa lightens up that dense almond crumb and makes something quite light and tender.
