Thank you for continuing to come up with monthly prompts for us, [personal profile] runpunkrun! Happy 2024!

My rec is Red Boat Fish Sauce, made from anchovies. A Vietnamese friend who is an awesome cook introduced me to it, and I've been adding a little bit to savory dishes ever since. It makes food more flavorful without being overwhelming, and does a good job of compensating for not adding onions, garlic, or peppers to my cooking.

Their FAQ says, "manufactured in-house, meaning there are no other allergens or cross-contamination besides fish." Also, "Are your products gluten-free? Yes. Our sauces do not contain any wheat or wheat by-products and are produced in a gluten-free facility."
