Date: 2024-01-01 09:46 pm (UTC)My rec is Red Boat Fish Sauce, made from anchovies. A Vietnamese friend who is an awesome cook introduced me to it, and I've been adding a little bit to savory dishes ever since. It makes food more flavorful without being overwhelming, and does a good job of compensating for not adding onions, garlic, or peppers to my cooking.
Their FAQ says, "manufactured in-house, meaning there are no other allergens or cross-contamination besides fish." Also, "Are your products gluten-free? Yes. Our sauces do not contain any wheat or wheat by-products and are produced in a gluten-free facility."

Date: 2024-01-02 07:54 pm (UTC)I've got Red Boat Fish Sauce in my fridge right now! We've only been using it in stirfry but maybe I'll experiment with putting a few drops in other savory foods. I can't eat soy sauce (or peppers), so I'm always looking for ways to add more umami.
