Date: 2022-02-16 04:49 pm (UTC)Yesterday I made these Oatmeal Chocolate Chip Bars from Gluten-Free Goddess and they're super quick and tasty but crumbly as heck. They'd make a GREAT topping on yogurt or ice cream but they are not bars over here.
I did use light olive oil instead of melted coconut oil, but I don't see how that'd make a difference. If I made them again, I'd throw in an extra egg, or even like half a mushy banana or a glop of applesauce. The dough was very dry and never came together, so I think it just needs some more liquid. Doesn't contain gums, though!

Date: 2022-02-20 12:17 am (UTC)I'm under the impression that melted coconut oil solidifies when it's back at room temp, which might help with the crumbly incoherence?
On further reading the recipe, I just don't see enough liquid in there. Being me, I may try this with some cooked squash.

Date: 2022-02-20 03:24 pm (UTC)I don't think the oil is present enough in the cooked bar for the coconut oil thing to be an issue, not like it would be in a fudge, for example.
Mashed up squash would also be a good way to get more liquid in there. I'd say anywhere from 1/4 - 1/2 cup.

I pulled down my Pain des Fleurs Buckwheat Crackers, slowly spread some room-temp butter on them, then added a scant teaspoon of Tiptree's Lemon Curd to each.
