Keto Berry Teacake

A rich, moist cake with delicious berries. I recently made this and it's my new favourite thing. It's not exactly 1-person cooking but it's a good size for one, and I can eat all of it within a few days. :)
Prep Time: 10 min | Cook Time: 45 min | Total Time: 55 min | 8 servings. Super quick and easy to make.
Ingredients:
3 large eggs
1 teaspoon vanilla extract
1/2 cup erythritol or allulose (or similar granular sweetener for baking). If not bothered about the keto aspect, use sugar.
1/3 cup melted butter (or coconut oil)
1/2 cup greek yoghurt or sour cream (or coconut cream or coconut yoghurt)
2 cups almond flour
2 teaspoons baking powder
1/4 tsp salt
3/4 cup berries. Frozen raspberries are excellent (separate them into individual frozen berries), or fresh blueberries.

Directions: Mix the eggs, vanilla, sweetener, yoghurt and butter. Add the flour, salt, baking powder. Stir in the berries. Put in a greased loaf tin with the base lined with baking paper. Cook for 45 min, covered with foil. Check that a knife inserted doesn't come out wet. Store in a closed container outside the fridge. Yummy eaten warm, and fine across the next few days. I love raspberries so I prefer those, and their tartness is nice. If you prefer a less-sweet cake, just use 1/3 cup sweetener/sugar.
