Bob's Red Mill Everyday Gluten-Free Cookbook: 281 Delicious Whole-Grain Recipes, by Camilla V. Saulsbury: Relentlessly whole grain. As someone who just ate a corn muffin for breakfast, I felt like a ridiculous failure just paging through this, but it has a huge variety of soups, salads, breakfast items, meatless main dishes, breads, muffins, granolas, and desserts. All recipes have a little intro and most offer variations on flavors and tips for substitutions and storage.

None of the recipes use gums as far as I can see, and instead utilize ground chia seeds, psyllium husks, and flaxseed meal. There is very little white rice flour to be found here, but lots of millet, teff, sorghum, quinoa, amaranth, and oats, all of them used both whole and ground.

Measurements are by volume (U.S. and metric (who is measuring their flour in mL??)). The book has an extensive introduction and index, and four sections of color photos that helpfully give page numbers to the accompanying recipes.

I haven't made anything from this, but it looks like a great book if you're ready to dive head-first into a vault of whole grains, and it's a wonderful companion to Bob's many products.
