This is an easy meal using mostly prepared ingredients. Packs and reheats well for lunches or dinner another day.

Take a baked potato, slice it in half longways and then again as many times as you wish, and add toppings: chopped pastrami or turkey lunchmeat, sauerkraut, swiss cheese, and Thousand Island dressing. Go to town.

I used to love a Reuben sandwich, and this is a great substitute.
