makes 12–15 balls, 3–5 servings
prep 30 - cook 40

2 large eggs
1 lb ground turkey
1/2 c grated parmesan
1/2 c minced fresh parsley
1 c GF rolled oats
1 Tbs olive oil
1 Tbs tamari
2 Tbs red wine vinegar
1.5 Tbs ground basil
1 tsp salt
1/2 tsp ground mustard

Beat eggs in a large bowl, then combine with rest of ingredients. You can start with a wooden spoon, but at some point you’ll need to mix with your hands.

Roll into 2" balls, space evenly on greased baking sheet/pan

Bake at 375°F for 30 – 40 minutes until golden brown

Variations: If you can eat alliums, please add in

1/2 c minced onion
1 tsp minced garlic

Refrigerated leftovers keep well for four days and you can make tiny meatloaf sandwiches with round GF crackers.
