Our prompt for November is pasta and pasta substitutes! In other words, this month is for noodles and zoodles. Share your favorite recipes, products, and tips for pasta and/or pasta analogues.

We’re big fans of Taste Republic’s fresh GF pasta — the texture is so good that we’ve fooled non-GF eaters. It’s expensive — US$6 for 12 ounces (dinner for two in our house). Our go-to is Spinach Linguine, made of brown rice flour, potato and tapioca starches, eggs, xanthan gum and powdered spinach. You can find it with other refrigerated fresh pastas, or in the frozen section -- it keeps up to a year because it's well sealed.

Taste Nation also make vegan and grain-free iterations, including lasagna sheets, filled pasta like tortelloni or ravioli. Right now their website is down, but they’re available across the US in Target and Whole Foods. (And I’d be enthusiastic even if they weren’t manufactured here in my home town)
