I was curious about this one: https://food52.com/recipes/75069-instant-pot-indian-tomato-coconut-soup, so I've now tried it. I used sweetener instead of honey and overdid that so then I had to add a bunch of other stuff to correct for that. I liked tbe end result but it was a bit lacking in umami for me so my revised recipe is:
Instant Pot Indian Tomato Coconut Soup

GF, Low Carb, Soups
Prep Time: 5 minutes | Cook Time: 20 minutes on stovetop | Servings: 2 to 4

Ingredients:
1 ~400g can full-fat coconut milk
1 ~400g can diced tomatoes
1 onion, diced
1 teaspoon minced ginger
1 teaspoon minced garlic
1-2 teaspoon sweetener (taste after 1 tsp)
1 teaspoon salt
1 teaspoon ground turmeric
1/2 tsp ground cumin
1/2 tsp ground coriander
2 tsp tomato paste
1/2 teaspoon cayenne pepper/red chilli, or equiv of sriracha
1 chicken or veggie stock cube
1 splash fish sauce
1 splash lemon juice

Directions:
Put all ingredients into the Instant Pot and cook on High for 5 minutes. Allow the pot to sit undisturbed for 10 minutes. After that, release pressure. If you start to see sputtering and spewing from the valve, close the valve and try again in 5 minutes. Remove from the pot and use an immersion blender to blend into a smooth soup (or leave it a bit chunky).
For stovetop: Cook all ingredients together until the onion is very soft. May not need to remove it from the pot and use an immersion blender to blend into a smooth soup if you used diced tomatoes - a bit of texture was fine.
