Here’s an entirely new processed food!
I stumbled on egglife foods egg white wrap at our standard grocery in the refrigerated flat foods section. They’re floppy, slightly spongy 6"/15cm disks comprising egg whites, xanthan gum, salt and nisin preservative. The "original" flavor (plain) is basically tasteless. Fifteen seconds in an ungreased hot pan (or in a microwave) takes the chill off them. In addition to containing no gluten or diary, they’re targeted for keto and paleo eaters — zero carbs and 5g protein each.
The Crepini Grande Wraps with Gluten Free Grains is larger at 9.5’/24cm. Even floppier and thinner, they contain: Egg white, whole eggs, GF flour mix (brown rice, whole grain sorghum, millet, long grain rice flour, potato starch, tapioca starch, xanthan gum), olive oil, sea salt, spices, citric acid. Even with all those grains, they’re tasteless, zero carb and 2.5g protein. They’re also large enough I could imagine using them instead of wheat flour tortillas in an enchilada recipe. These wraps are sold at Trader Joe’s under the house label.
https://ketolish.us/recipes/egglife-copycat-egg-white-wraps/ provides a do-it-yourself approach to the egg-white only version.
Is there a non-wheat flour tortilla you favor?

Date: 2022-04-17 08:01 pm (UTC)We've got Siete chips and tortillas here on the west coast. I've been eyeing their tortillas, but they're so expensive and I keep telling myself I should just make my own. (Like that's ever going to happen.)
