I got this recipe from [personal profile] kass:

Shave up a yellow squash or a zucchini with a vegetable peeler until you get to the seedy core and toss that. Squeeze a bunch of lemon or lime juice over it. Add a little olive oil. Then put in whatever combo of herbs you want.

ginger + cilantro + sesame oil

parsley + mint + basil

are among my faves.

I hope you like it! I really love how versatile it is. You can put soy sauce in it or a salad dressing you like or fresh thyme or just whatever.

I probably should have said it is best to let it sit and marinate for just a bit so the flavor soaks into the squash.
