This is a tasty wrap and I use it to roll up anything savoury, or even for desserts. It's a nifty recipe if you're cooking for one, fast and easy to make in a microwave and the simple quantities are easy to remember. Microwaving it like this means it's easier to get the shape and thickness right, and no risk of it sticking to a pan. But you can also cook it in a large frying pan on medium to low heat, again using a circle of baking paper as below to prevent sticking. If so, just cook it through thoroughly, don't try to turn it.

Ingredients:
1 egg
1 Tbsp almond flour
1 Tbsp ground psyllium (I use plain Metamucil - I assume this is paleo as psyllium's a plant).
1 Tbsp unflavored protein powder. (I plan to get some but have meanwhile subbed with milk powder which yep, not paleo. The sub makes the wrap softer as well, I think). No idea if protein powder is paleo, but protein mostly is, so ¯\_(ツ)_/¯
1 Tbsp cream - or coconut cream if going paleo. If just using a nut milk, also add some fat like tahini.
1 pinch salt (and pepper if wished).
Without added pepper this can also be a crepe dessert wrap. If so, adding a little stevia or coconut sugar is optional, but not essential.
Directions:
Prep microwave - cut a circle of baking paper to cover the glass platform (easy way is cut a square and fold into a 1/8 segment, then round off the wide end with scissors). Put the paper flat on the microwave platform (dampening the glass slightly helps, and the paper disc is reusable). Leave the paper-covered platform out of your microwave.
Whisk everything in a small bowl. Make it runny enough to pour but viscous enough to hold shape so as not to drip everywhere.
Pour batter into the center of the paper-covered microwave platform. You'll need to tilt the platform to get it maximally wide and circular. Carefully put the platform plus batter back into microwave (easier than it sounds as long as your batter's a bit viscous). Microwave for 60-120 sec (time depends how old and useless your microwave is - mine doesn't cook well in the center so needs 2 min). Wrap should be slightly bubbly at edges and firm, not wet, in the center. Lift out the paper, plate the wrap and fill with goodies. Best to cut the wrap in half to manage eating it, as it's fairly wide.
Fillings I've tried:
- Breakfast wrap with cheesy omelette/scrambled eggs
- Chicken fajita filling
- Chilli con carne
- Basically any stew or stir-fry leftovers
- Fruits like raspberries, strawberries, sliced banana, plus coconut yoghurt (if paleo), or ice cream/whipped cream, and maple syrup or honey.
