Random recipe - Cheesy keto buns

This isn't paleo but I recently developed the recipe and wanted to share it.
Prep Time: 5 min | Cook Time: 25 min | Servings: 9 buns
Ingredients:
1.5 cups almond flour
0.5 cup coconut flour
0.5 cup plain Metamucil (or psyllium husks)
2 teaspoons baking powder
1 teaspoon salt
2 eggs
2 tsp apple cider vinegar
1.5 cups hot water (not boiling, but mix a little boiling water into what comes out of your hot tap if your local hot water isn't very hot)
1 cup grated sharp cheddar or a sweetish cheese like Emmenthal, or any tasty cheese that you like.
Directions:
Preheat oven to medium hot.
Mix all the dry ingredients except the cheese. Add in the eggs and vinegar and mix, then the hot water. Mix well (I find a wooden spoon is best). Lastly, stir in the cheese - make sure the mix isn't boiling hot or else it'll all melt.)
Form into 9 balls on a baking paper-covered tray. Bake for about 25-30 min. Check after 25 min and take it from there.
They last maybe 4 days in a sealed container out of the fridge, longer in fridge, and freeze well.

Delicious when warm all by themselves, or with butter and any savoury spread, or (if you're a jam and cheese person), with raspberry (etc.) jam.
