Prompt: Breakfast Recipes

Hello all. For this week's discussion we're going to do a recipe prompt. And the prompt is {secret password voice}: Breakfast.
Now, I've been known to eat tuna salad for breakfast, so my definition of the meal is broad: If you eat it for breakfast, it fits this prompt! We're interested in quick breakfast foods, foods you can make ahead and chill or freeze, special breakfasts, complicated breakfasts, family recipes you've adapted to be gluten free—whatever you think of when you think of breakfast.
To fill this prompt, you can do several things:
- Write up a favorite breakfast recipe and post it to the comm. We would love this the most because we want to know what you're making.
- Pop into the comments of this post with a link to a recipe you like, a description of it, and what you like about it.
- Start a breakfast-related discussion in the comments of this post or join a conversation already in progress.
- Try someone's breakfast recipe and reply to their post (or comment) with any substitutions or changes you made and how it turned out. This is gold star territory.
Honestly, any or all of this would be great.

Date: 2019-03-22 01:51 am (UTC)1. King Arthur Flour GF Pancake Mix: the gold standard, as far as my kids are concerned. Tender, fluffy traditional pancakes. I sometimes like something heartier & less sweet, but there is no denying that these are tasty. I make them with vegan margarine and either almond or cashew milk so that they are dairy-free as well, and they STILL taste like pretty awesome traditional pancakes.
2. Pancakes made from King Arthur Flour GF Baking Mix: I kind of assumed that this would taste just like the pancake mix, but it doesn't. I have made some excellent muffins with this baking mix (recipes that I will share some other time), but the pancakes turn out noticeably more dense and less tender than the single-purpose mix. Still tasty, though.
3. Cherrybrook Kitchen Grain-Free Pancake Mix: this was a special sale at the co-op, not an item they usually carry, so I don't know how easy this is to find. This is the GRAIN free mix, not their GLUTEN free mix -- but it is also gluten free (the mix is based on sunflower seed meal). I was a bit skeptical at first, but these were quite nice, with a less-sweet, multi-grain sort of vibe that I liked. I noticed a tiny bit of bitter aftertaste, but no one else in my family did. The batter thickened a lot while standing, so I had to thin it a couple times between batches. Includes egg-free instructions on the box.
4. Tempt Hemp Pancake Mix: This got a hard no from me. The texture was dry and there was a terrible bitter aftertaste that lasted literally all day -- yet no one else in my family said they tasted it, so YMMV. I don't remember anything else about it; I guess once I decided that I hated it, my brain used that storage for other things!
And a recipe: if you're looking to cook with whole foods or just enjoy experimenting, I recommend The Paleo Mom's green plantain pancakes. Made mostly of pureed plantain and eggs, they have the texture of traditional pancakes, with the mild fruit/vegetable flavor of green plantains. My kids are not crazy about these, though they are reasonably happy to eat this batter in waffle form. I really like them as a change of pace. They are hearty and filling and the plantain flavor blends very nicely with maple syrup.

Thick Chewy Granola Bars
Date: 2019-03-22 04:20 pm (UTC)Mine never quite turned out "chewy" more like, incredibly dense, but they were thick, and if you can force a knife through them, you can easily pick the bars up and eat them. I think the chewiness is a direct result of what kind of sugars you use. So that's another area you can experiment in.

From:Gluten Free Oat Bran Waffles

1/2 cup oat bran
1/2 cup buckwheat or tapioca flour
2 tbsp butter
1/2 cup lowfat buttermilk
1/2 cup whole milk
1 tsp gluten-free baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large egg
(1 tsp sugar if preferred)
Directions:
Heat griddle (this is not a Belgian recipe, use small squares)
Melt butter 20 secs in microwave; beat in egg
Add to milk and buttermilk in large mixing bowl
Sift together buckwheat and baking powder/soda/salt and add oat bran
Mix into butter/egg mixture with fork. DO NOT OVERMIX. Leave lumpy
Treat griddle with touch of spray oil or butter
dip 1/3-1/2 cup of mixture into treated griddle
Makes ~5 waffles
