Mashed potatoes topped with sauteed cabbage&apple and shredded cheddar cheese. (Does that need more of a recipe? Shred the cabbage thin and cut the apples to slivers, and sautee together in whatever fat sounds tasty. Start the cabbage first if the apples are a type prone to falling apart. Season with salt and pepper and whatever else sounds tasty -- I often use sage or dill or mustard or cumin.)
