gluten-free eats

Mine didn't really dome either--not like the blueberry muffins--instead they just sort of spread, but they did smooth themselves out while cooking. Must be the combination of flours we used that made the difference. I'm thinking I want more orange flavor in mine--maybe more OJ or the zest of two oranges.

I am ALSO pondering an apple cranberry version. And cornmeal and cranberries sounds very promising.
