gluten-free eats

I make this as mini muffins as that's the only muffin tray I have. They'd work as larger muffins but they don't rise much, so don't expect that. The mini ones are a good size as they're dense and filling. And originally it was a cake recipe that I used to make in a ring tin, but the mini muffins are way easier to freeze in bags.
