For this recipe, I experimented with the cottage cheese ice cream recipe that went viral on tiktok.
GF, can be keto-friendly, gum-free
Ingredients:
500g cottage cheese or Ricotta (full fat is best)
250g fruit - I used frozen blackberries which were all I had
100ml maple syrup or about 4 Tbsp allulose (I used maple syrup as I was out of allulose). Or muscovado sugar would be good instead of the allulose if lower carb isn't an issue.
½ tsp salt (omit this if the cottage cheese isn't salt-reduced)
1 tsp vanilla extract
1 Tbsp vodka or other spirits (optional)
Directions:
Put it all in a food processor and blend until it's as smooth as you can get - the fruit made it a bit textured. Unfrozen fruit would have been easier to blend but frozen was what I had and I thought it might make instant ice cream - it didn't. Finally, taste the ice cream mix once blended and adjust sweetener amount as needed.
Spoon it out into a container with a spatula, ideally a wider rather than taller container, cover it, and put the container in freezer until thick - don't freeze it too solid, or if it's solid, let it thaw a bit before eating. As before, adding 1 Tbsp vodka or other spirits helps stop crystals forming.
My Review of this:
Cottage cheese definitely works to make ice cream at home, and this is the simplest recipe of the three. Very easy to make, and it tasted okay. I drizzled a little extra maple syrup on top when serving it. I think there was too much texture with the blackberry pips. Next time I'd use blueberries, raspberries or strawberries as the fruit - blackberries aren't quite as tasty. I'd also sieve the fruit to remove pips. Some versions of this using strawberries or raspberries also have crumbled Graham crackers in them for a "strawberry shortcake" effect, but we don't have Graham crackers in NZ.
Notes:
Tip: for a fast clean-up, rinse off your food processor parts and spatula immediately in hot water. They clean off quickly, no soap needed.
Any flavour can be substituted, e.g. 2-3 Tbsp unsweetened cocoa powder, different fruit like strawberries, raspberries, fresh mango, or lemon juice with a little grated zest, etc. Adjust the sweetener to taste.
