I've been trying to eat more veggies and this is one solution. It's tasty and very fast to make, especially if you use a pre-cut bag of coleslaw mix. But those tend to go off faster so I'm slicing up my own veggies a bit more these days. 

Ingredients:
4 cups of any type of chopped cabbage - white, savoy, red, etc.
1 cup finely chopped carrots (I prefer chopping them as they get wet when grated)
1/2 cup chopped spring onions (green onions) or half the amount of finely chopped red or brown onion
Those are the basics. Other veg are optional, like finely chopped red capsicum, bean sprouts, etc.

Other things I like to add are a handful of grated cheese (a sharp cheddar), and 1/2 tsp caraway seeds. Plus salt and ground black pepper to taste. 

Dressing:
I just use a store-bought peanut sauce, about 2 Tbsp. My fave is Whitlock's peanut satay sauce, but although there's no wheat products in it, the label says may contain gluten so I guess they're warning for cross-contamination if you're really sensitive. I haven't had any problems with it, but YMMV. Obviously any mayo/dressing of your making or choosing is fine as well. 

Anyway, it might sound like an odd mix of flavours, but it works.
