Nah, folks can have averse reactions to iron or magnesium, which are inorganic minerals for the most part, unless they've already been modified into easier to digest compounds. It sounds like unless you're very allergic to certain things, this probably won't affect you--and if you're allergic against gluten, it seems as though the biggest risk might be things like 'gluten free' oats being subbed for 'most likely gluten free oats but not proven gluten free' (though that's somewhat of a myth anyways...)

If you're buying lots of heavily processed foods, it's a good idea for the next year or two to consider trying to buy more base ingredients--unprocessed veggies, fruits and meats and grains if you can. Hopefully it won't be too much of an upset, but chances are good that there will be little changes to things like 'spice' that could have irritants, like nightshades, alliums, pepper and the like that might not have been there before.
