So, I saw this recipe for GF Earl Grey Tea flavored shortbread cookies in a list of recipes using Earl Grey tea linked to by [profile] yysabetwordsmith (here's the list of recipes). Being me, I tinkered with it in several ways. Since I'm sensitive to dairy, I replaced the butter with Earth Balance buttery spread, which has all the working properties of butter. ALso, because more flavor makes better desserts, I raised the vanilla from 1 tsp to 2 tsp, and because the few tea-flavored things I've tried in the past didn't taste much of tea, I used 7 tea bags rather than 6. Finally, because I find the America's Test Kitchen GF flour blend to be the best I've ever used, I replaced the rice flour with it, and added 1/8 tsp of xanthan gum to make the cookies a hair sturdier.

The result was declared to be utterly delicious (and delicious smelling) by all who tried them. However, you're also eating 7 tag bags worth of black tea in a fairly small batch of cookies - I think it's about 1 tea bag for every 3 cookies. Hence delicious cookies of wakefulness.

Here's how to make the flour blend, I use powdered soy milk, which you can order from Amazon:

Ingredients

24 ounces (4-1/2 cups plus 1/3 cup) white rice flour
7-1/2 ounces (1-2/3 cups) brown rice flour
7 ounces (1-1/3 cups) potato starch (corn starch works just as well if you are sensitive to nightshades)
3 ounces (3/4 cup) tapioca starch
3/4 ounce (3 tablespoons) nonfat milk powder, or substitute soy milk powder
