It's pouring down this morning so I wanted something hot and chocolatey for breakfast before I have to go out in the weather, so I made these. The recipe can likely be improved upon (I didn't follow a recipe, I just made this up) but it did the trick for me.
1 ripe banana
1 egg
a small handful of walnuts, chopped (like 8-9 whole walnuts)
a bit of dark chocolate, chopped (prob 25-30g?)
a bit of honey (a teaspoon? I have one of those runny ones, I just squeezed until it looked right)
a bit of salt (half a teaspoon?)
a bit of baking powder (half a teaspoon?)
70g provena gluten free baking flour with oats
Mash the banana, chop the things, mix all together, put in muffin forms and stick in the oven for about 15 minutes, on 180 degrees C. Let cool for about ten minutes before eating. All in all it took me about 25 minutes to put this together, dishwashing not counted, because I'm absolutely not doing these dishes until I get home tonight.
They turned out super tasty! This recipe makes three muffins, and I had two and put the third away for when I get home from work as a treat. I'm not usually into carb heavy breakfasts (and I'm already regretting this one, lmao) but if that's you? These are a treat. YMMV on the sweetness, I wanted these to be more like bread than cake, so I was light on the honey and they turned out plenty sweet for me.
ETA: perfectly good after a few minutes in the toaster. yum.
