Teff Muffins

I keep thinking I've posted this recipe here before, so now I'm going to go ahead and post it! It's Bob's Red Mill's Teff Muffin recipe off the back of their Teff Flour package.

Dry Ingredients
3/4 cup Teff Flour
3/4 cup Brown Rice Flour (or Sweet White Rice Flour)
1/2 cup Arrowroot Starch (or Tapioca Starch)
1-1/2 tsp Baking Powder
1/2 tsp Ground Cinnamon
1/4 tsp Sea Salt
1/2 cup Brown Sugar (I only use 1/8-1/4 cup)

Wet Ingredients
2 Eggs, beaten
1/3 cup Olive Oil
2/3 cup Water (plus a bit extra if the batter is stiff)

Optional Add-Ins
1/2 cup Hazelnuts chopped (or other nuts)
1/4 cup Chocolate Chips
1 mashed ripe banana (add to Wet Ingredients)
