This recipe is an adaptation of a salad we enjoyed from the salad bar of a local pizza chain.  I managed to reproduce the effect, even if my recipe isn't the same as theirs.  I sliced up a batch this morning and thought y'all might enjoy it, too. 

Ingredients:
2 bell peppers
1/2 red onion
1 cup italian vinaigrette (I used gluten free Wish Bone Italian)
2 ounces feta cheese, crumbled
2 ounces sliced black olives (optional)

Back when I was eating dairy, Alton Brown's Chewy Gluten Free Chocolate Chip Cookies were my favorite chocolate chip cookies. They're buttery, not too sweet, have plenty of chocolate, brown nicely, and are crisp on the edges and soft in the middle. They're as good as any chocolate chip cookie I've ever eaten, including ones made with wheat.

Ingredients:

1 cup unsalted butter (or salted, who cares)
11 ounces brown rice flour ~2 cups
1 1/4 ounces cornstarch ~1/4 cup
1/2 ounce tapioca starch ~2 tablespoons
1 teaspoon xanthan gum
1 teaspoon kosher salt (I used Morton*)
1 teaspoon baking soda
2 ounces granulated sugar ~1/4 cup
10 ounces brown sugar ~1 1/4 cups
1 whole egg
1 egg yolk
2 tablespoons whole milk
1 1/2 teaspoons vanilla extract
12 ounces semisweet chocolate chips

Hi All

I'm going to be travelling in Ireland (primarily Dublin and Belfast) in the next few weeks. Anyone have recommendations for successfully eating gluten free? Places to go, food to eat? Places to avoid? Traps for the unwary? I'm running on a limited budget, and I'm (as much as possible) also vegetarian and dairy free. The more I can maintain that, the better I'll feel!
