Hila's Chocolate Mug Cake

As part of Dunava Balkan Choir's virtual CD release party in April 2021, singer Hila Lenz demoed this chocolate mug cake for all of us to make at home. I was astonished that it was something I could eat, and I've made it often since.

Ingredients
2 Tbs. nut butter or tahini
1 egg (orĀ 1 medium overripe banana, reduce sugar)
2 Tbs. sugar
1 Tbs. cocoa powder (unsweetened)
Pinch salt
Rounded 1/2 tsp cinnamon
Pinch cayenne (optional)

Time
5 min total

Tools
12-16 oz mug
microwave

Methods
Add dry ingredients to mug and mix. Add egg and nut butter to mug. Stir well.
Microwave for 1 min. Cooking time may vary with size/power of microwave.

Serving
Allow to cool briefly before eating. You can add a few strawberries or raspberries on top.

Notes
I've been making it with tahini since that's what I have, and it works fine. I have an elderly microwave and the cake has a molten spot in the center even if I add 10 sec to the cooking time. Even better!

I like this one! The chocolate and nut butter are enough to cover up that overly-eggy flavor so many mug cakes have. Also, nicely rich without being overwhelming.
