I had to go dairy free last year and have discovered that I like the Nurishh cream cheese which can be found at Kroger.

Here's a GF recipe for carrot cupcakes [personal profile] goss just posted. It's dairy-free apart from the frosting, so if you made a simpler frosting just with confectioner's sugar, lemon juice and a little water they'd be fine.

Here's a vid for a dairy-free Chicken Alfredo-like dish. https://youtu.be/3iUyRYuYiIk. The key is using coconut milk. Another vid I saw recommended adding some nutritional yeast for a umami cheeselike taste. GF noodles, of course.

I recently had Follow Your Heart cheese (pretty sure it was a mozzarella block) and liked it. It was as a cheese bread/pizza topping. Melted well, creamy cheese mouth feel, and either the seasoning or the cheese itself had a pleasant taste. Primary ingredients are palm fruit oil and potato starch.
