I'm under the impression that melted coconut oil solidifies when it's back at room temp, which might help with the crumbly incoherence?
On further reading the recipe, I just don't see enough liquid in there. Being me, I may try this with some cooked squash.

I don't think the oil is present enough in the cooked bar for the coconut oil thing to be an issue, not like it would be in a fudge, for example.
Mashed up squash would also be a good way to get more liquid in there. I'd say anywhere from 1/4 - 1/2 cup.
