recipes for GF flatbreads, crackers, etc.?

Hello fellow gluten-free people. I want to upgrade my baking skills. Right now that's taking me in the direction of gluten-free crackers, flatbreads, etc. So... can you recommend good recipes, preferably fairly easy ones? That use pre-blended GF flour as opposed to needing to blend different flours etc. to make your own? I would be so happy.

I have Googled for these already, so I guess what I'm looking for are your favorite ones available on the interwebz and/or any you got from a cookbook or from your own sweet brain. Thanks so much!

I don't have any particular recipes, but wanted to mention a tip that I rarely see in GF recipes or baking books: always let your batter/dough rest for 15 minutes before baking so the GF flour hydrates. This is the best way to avoid gritty textures.

Mashed Potato Flatbread

Potato flatbread! Great way to use up leftover mashed potatoes (or you can quick-cook a 'tater in the microwave then peel it), and a good way to stretch that expensive/scarce gf flour supply. These taste like a biscuit, can be baked in the oven, and are best hot. I have never used the rice flour+cornstarch called for in this recipe, only a preblended gf flour. You can also substitute oil plus a pinch of salt (or even better, melted bacon/beef/chicken fat) instead of butter. They are yummy, good for breakfast or snacks.

I've been meaning to bake crackers/flatbreads - this post would give me the perfect excuse to finally do it tomorrow and report back. It's an untested recipe I wrote up myself so who knows how it's going to go! I'll be using a UK gf flour brand though as that's where I live.

I've been working on perfecting these Tomato & Oregano Cassava Flour Crackers. They only have the one flour in it--cassava--but unfortunately it's one of the more expensive ones.

There are a lot of basic almond flour recipes out there, too, which I've yet to try, but they all pretty much look like this Almond Saltine Cracker, or that but with spices or herbs, like these basil crackers.
