Prompt: Legumes

Our prompt for March is legumes! The Fabaceae or Leguminosae (commonly known as the legume, pea, or bean) family is the third largest family of flowering plants, consisting of over 20,000 species, and includes lentils, peas, peanuts, and beans. Hot tip: All beans are legumes, but not all legumes are beans.

A recipe rec using black beans! Pig Out Salsa is a really great snack with chips, but I think it would be great as filling for a taco or burrito too. I make it with Simple Truth brand vegan chorizo and it still works well. I've also made it with jarred salsa in place of tomatoes and onions, which changes the texture up quite a bit, but is also still good.

I've made Smitten Kitchen's tangy braised chickpeas. I did make a couple of minor modifications, more garlic because 4 cloves is not enough and cremini mushrooms instead of portobello. I added some baby spinach at the very end. I served it over rice. Very tasty.
