I sometimes make blintzes with a modified version of this crepe recipe https://leitesculinaria.com/84316/recipes-basic-crepes.html using Pamela's almond pancake and baking mix flour and using them in this recipe for the filling https://toriavey.com/toris-kitchen/shiksa-blintzes/ (without the lemon juice, because I don't care for lemon). Instead of cooking it in the pan, I brush egg onto the folded and filled crepe and put it in an air fryer for 8-10 minutes and cook it that way.

It's pretty good, and certainly a lot cheaper than buying premade gluten-free blintzes that taste worse XD
