Savory Meatloaf
Six servings • Prep 15 minutes • Cook 30–45 minutes
Ingredients
- 225 g (1/2 lb) ground turkey
- 225 g (1/2 lb) ground beef
- 155 g (1-1/2 C) rolled oatmeal
- 1/2 sweet red pepper, chopped fine
- leaves from 15 stalks flat leaf parsley, chopped fine
Spices, whisk together:
- 45 ml (3 Tbs) dried basil
- 45 ml (3 Tbs) dried chive
- 5 ml (1 tsp) mustard powder
- 5 ml (1 tsp) salt
- 5 ml (1 tsp) oregano
- 1 ml (1/4 tsp) ancho pepper
Liquids, stir together:
- 2 eggs
- 15 ml (1 Tbs) Tamari
- 30 ml (2 Tbs) olive oil
- 45 ml (3 Tbs) red wine vinegar
All of the above goes in a large bowl. Knead until thoroughly mixed, patting into a half round log shape in a greased 1.5l rectangular pan (9" x 5" inches).
Bake at 190°C (375°F) for 30–45 minutes
Very tasty cold for lunch tomorrow

I mix ground beef and pork sausage with the oatmeal and only use one egg. My choice for additional umami is worcestershire but I can certainly see how tamari would also work.
Since Himself brings me the ingredients and asks for meatloaf frequently I figure I've got it right for us. I may try one or two of your ideas and see how they play out.

Where do you find gluten-free Worcestershire sauce?
(If it was up to me I'd use Vietnamese fish sauce--I, am an anchovy lover.)
Tragically I've learned that chive is the only allium I can tolerate -- the red pepper is replacing finely chopped onion.
