I've checked out several Youtube vids and all these look good - however, we don't do Thanksgiving where I live so I have no idea if these are "traditional" or not. I guess GF etc. variants are allowed to be a bit different, anyway.

Is there a harvest-adjacent festival in NZ, whether Maori or settler?

Not really. I guess it coincides with Easter for us southern hemisphere types, but that's not generally associated with feasting except on chocolate! I'm not aware of any Maori harvest feast, either. They mostly grew Kumara (sweet potato) and I'm not sure that has a definite harvest time.
