Recipe: Finnish salmon soup (spring-summer)
I've been making this a lot lately because it's one of my ultimate comfort foods. It's been raining in Scotland since early June (we had such a good spring! sigh), which makes this perfect for the colder days when you want something hot but still very summery.
Variations and procedure under the cut.
Makes 4-5 servings.
olive oil
1 onion, finely diced
2 bay leaves
8 whole allspice berries
800ml fish stock / 800ml water + stock cube
200g new carrots, diced
500g new potatoes, diced
500g salmon, cubed
200ml cream
a large fistful of fresh dill, cut
a blob of butter (optional)
salt and fresh ground black pepper to taste
Prepare the veggies. In a large pot, sautee the onion for a few minutes. Add the allspice berries and bay leaves continue for another few minutes. Once the onion is clear/soft and you have the fragrance of the allspice berries, add the fish stock and the carrots. Cook the carrots for 10 minutes. Add the potatoes and cook for 20 minutes or until the veggies are cooked. Add the salmon, cream, and dill and bring to the boil. As soon as the soup boils, take off heat. Add salt and pepper to taste, and a blob of butter if desired. (Serve with good bread. In classic Finnish manner it would be dark rye bread with butter, but hey.)
Variations:
STOCK - it's hard to find fish stock or stock cubes where I live, so I usually use vegetable stock cubes. I honestly find that I get enough fish flavour from the salmon without also using fish stock but ymmv.
ONION - some recipes call for leeks instead of onions, in which case the leek is added along with the salmon. I'm not a huge fan of that tbh as I prefer my onions more cooked (allergies), but try it out if it sounds good to you! You can use any onion you like btw, I have made this soup with giant red spring onions, regular spring onions, shallots, red onions, a mix of shallots and spring onions...
VEGGIES - some recipes only call for potatoes, no carrots. You can also use turnips, beets, parsnips, celery root, other root vegetables, those bags of mixed veggies for soup, or whatever your heart desires. The idea of this soup is to use fresh produce because it's a summer soup BUT YOU DO YOU.
FISH - you can use a mix of salmon and white fish, or use rainbow trout or other pink fish in place of salmon, or make this soup with only white fish. The recommendation is to use fatty fish, though I've seen soup mixes with salmon and cod. You can use frozen fish for this, just thaw it first.
DAIRY - can be made with skim milk, semi-skimmed, or whole milk instead of cream. I often go half-half on cream and whole milk. (I always use lactose-free.) In Finland you can get a vegetable-based cream that is often used instead of dairy cream in this dish as it tastes very similar and looks the same, but I don't know if, say, oat/soy/almond/etc milks are suitable here.
OTHER - white pepper instead of black, fennel, celery, chives
I don't get pre-diced salmon round here (and it would probably be more expensive if I did) so I fillet and dice it myself. If you haven't filleted fish before, here's a very good video that shows how. It's not very difficult, and tbh I don't have a fish knife so I just use whatever sharp knife I have on hand that is big enough to go through the fillet. I also use a cutting board...I wouldn't cut directly on the table like that. ๐
Also if you were to use a whole entire salmon fillet like the one in the video for this soup, I would get a VERY LARGE pot and double all the other ingredients and also invite everybody I know for dinner. a 500g fillet is about half. Some recipes call for 400g, others for 600g - I get my salmon from Lidl where it comes in half sides รก 470g. My point is, it's not a fixed amount.
