I made this last night and it's FANTASTIC! The only change I made was that instead of tomato soup I used my favorite tomato-based meatloaf sauce recipe for topping. A food processor (kitchen whizz, food chopper, whatever it's called in your corner of the world) helps tremendously with all the veggie chopping, I agree. I'm so happy to find a recipe to help stretch the increasingly-expensive meat. Thank you so much for sharing it!
