Portable Pancake aka Fast Flat Bread
This is a technique more than a single recipe: variations keep my lunch amusing and are listed at the bottom. Although I generally cook by weight, for this pancake, volume is crucial.
Prep 5 minutes** • Cook 9 minutes
Serves 1 as a meal, or 2 as a side dish
Tools
2 bowls
Whisk
Flexible spatula
Large metal skillet with (ideally glass) lid
Widest pancake turner/spatula
Method
- In small bowl, whisk together
- 1 teaspoon/5 ml spice
- 4 tablespoon/60 ml GF flour
- In larger bowl, whisk:
- 2 large eggs
- 1/2 teaspoon/2.5 ml vinegar
- 1/4 teaspoon/1.3 ml baking soda
- 4 tablespoon/60 ml squishy cooked veg
- Pour dry into wet and thoroughly combine
- Add 2 Tbs/30 ml vegetable oil to large skillet at just below medium. Preheat covered for at least 3 minutes. Generous oil is imperative so flatbread can float.
- Once oil is fragrant and making heat waves, scrape batter into pan, then tip pan in all directions to distribute batter evenly
- Cover, cook around 3 minutes. Bubbles appear all over the pancake. Center must be solidified enough to survive turning.
- Jiggle the pancake loose while sliding wide spatula underneath. Lower the pan so it’s ready to hold the cake as you turn it over.***
- Add toppings as desired then cover and cook for 2 more minutes
- Pull covered pan off burner and let sit for 1 minute
Spice possibilities
- pumpkin spice
- garam masala
- basil & oregano
- chopped garlic/scallions
Flour possibilities
- 32g buckwheat
- 24g quinoa (+ 1/2 tsp sugar)
- 36g garbanzo flour**
- 40g corn meal**
Squishy Cooked-Veg possibilities:
- Pumpkin
- Japanese eggplant (courgette)
- Summer squash
Topping possibilities:
- thinly sliced deli meat (corned beef, salami, ham, chicken)
- grated cheese
- salad-ready greens
- peanut butter
- jam
- yogurt
Notes
Oat and almond flours were too soft.
** Give these flours 30 minutes to soak
*** Easier approach to pancake flipping: use the tip of your spatula to cut the cake in half, then flip each half separately
