Recipe: Lembas Bread

This recipe is supposed to mimic the lembas bread from Lord of the Rings. It was on tumblr that I found it and it is from theweepingtimelord. It is similar to a shortbread or a scone but delicious, a little dry and a great munchy snack.

Ingredients
-2 ½ cups of all purpose gluten free flour (a good flour mix would be 1 ½ cup sorghum or white rice flour, ¾ cup potato starch, ¼ cup tapioca flour)
-1 tablespoon baking powder
-1/4 teaspoon salt
-1/2 cup butter, melted (I've also made it with cool but soft butter)
-1/3 cup brown sugar
-1 teaspoon of cinnamon
-1/2 teaspoon honey
-2/3 cup heavy cream
-1/2 teaspoon of vanilla

Directions

Preheat oven to 425F.

Mix the flour, baking powder and salt into a large bowl.

Add the butter and mix until fine granules (easiest way is with an electric mixer but I've done it by hand and it doesn't take too long).

Then add the sugar and cinnamon, and mix them thoroughly.

Finally add the cream, honey, and vanilla and stir them in with a fork until a nice, thick dough forms.

Roll the dough out about 1/2 in thickness. Cut out 3-inch squares and transfer the dough to a cookie sheet.Criss-cross each square from corner-to-corner with a knife, lightly (not cutting through the dough).

Bake for about 12 minutes or more (depending on the thickness of the bread) until it is set and lightly golden.

***Let cool completely before eating, this bread tastes better room temperature and dry. Also for more flavor you can add more cinnamon or other spices***

I've stored it at room temperature in a tupperwear container and it doesn't really seem to get stale, although I can't actually remember how long it lasted.

I love that this is a Lord of the Rings tie-in! It sounds like it has the kind of dry scone-like texture I'm a big fan of.

Also I tagged this dessert, but now I'm wondering if it's more of a breakfast or snack? ...or somehow all three?

I ran across this gif set on Tumblr and it reminded me of your recipe! Now I have a sense of what it's supposed to look like: Lembas! Elvish waybread. And also of how happy it makes Legolas.
