I make the quinoa and let it cool. Then I chop up a bunch of parsley (if I have other herbs like basil, mint, cilantro, I'll put them too), tomatoes, cucumbers, bell peppers. I stir all that in along with a little olive oil and then squeeze a lemon over it and maybe put a little red wine vinegar if it's not tart enough.
