What the heck is parchment paper, where did it come from, and why is it such a prominent baking aid these days? So many questions—here’s my attempt to answer.

Love parchment paper for gf baking, which can sometimes be sticky. I also use a silicone sheet (Silpat), but because those are thicker than paper, the sheet can throw off baking times. I think parchment is a must for gf baking and makes a world of difference (in my experience).

Rich history of this handy stuff. I can’t imagine baking without it now. When I’m doing cookies I find he same sheet can last at least 3 trays.
