Summer: I made summer rolls this week; another "bar" meal where everyone could assemble their own with desired ingredients (or toddlers could nom components separately)

If more of my household ate tofu I'd probably have done some baked tofu (bought or homemade) instead.
The chicken wouldn't be bad for winter either-- peanut sauce (spicy optional) can be warming as well as refreshing in heat, IMO.
Chili is big for winter. I've been doing instant pot recipes lately but these convert to stovetop or slow cooker just fine. Inevitably I tweak these based on whatever I have on hand/what I feel like.
